but the cooked "salad" that has julienned green mango, pork, shrimp, chiles etc...that is served hot and is usually fiery red with chiles.
does anyone have a recipe??

I will ask him for the recipe. Do you know where to find fresh green mangos around the Bay area?

Wed, September 13, 2006 - 2:14 PMthanks. I haven't been to Berkeley Bowl or Ranch 99, so I'll try those. Green papaya seems pretty easy to get here in SF. Not sure why we haven't seen the green mangos.

I did find this online, but I don't think that's what you meant:
Thai Green Mango with Sweet Fish Sauce, "Mamuang Nampla Wan"
Ingredients
10 green mangoes
1 lb palm sugar
1/4 cup water
1/4 cup fish sauce
1/2 cup chopped shallots
1/2 cup dried shrimp, ground up in a food processor or pounded in a mortar and pestle
2 finely sliced hot chile peppers
Method
Mix palm sugar, water and fish sauce in a pot and simmer over low heat, stirring constantly. When the mixture has become a thick syrup, add the shallots. Cook until shallots are tender. Remove from heat and blend in dried shrmp & chile peppers. Stir well, and set aside
Peel the mangoes and cut into thin slices (approx 1/4", but be careful not to cut them too thin). Place the mango slices in a container and chill in the fridge to improve flavor and crispiness.
Serving
Put mango on a serving tray with the sauce on the side. Dip mango slices into the sauce, eat and enjoy! -

Fri, September 15, 2006 - 12:20 AMokay, I spoke to my Thai Mom. She says she doesn't know what this cooked mango is. She says normally Thai people do not cook the mangos. I'm curious what this recipe really is. Can you ask the restaurant?

Fri, September 15, 2006 - 1:28 PMyeah I guess so > I think that all the ingredients are cooked, and then the mango is added in last so that it doesn't really cook per se...but the whole dish is hot and is good on rice. I get it at Sabuy Sabuy in Oakland and it isn't on the menu at all but man is it addictive and spicy!

BTW, let me break down the words "Yum Ma Meung" -- "yum" - means mixing sour & salt with dried ground thai red chilli peppers together (which is Thais' staple for mixing meats or veggies for "yum") and "ma meung" just means mango (It can mean either sweet or sour) but most of the salads on the menu tend to mean semi-sweet/sour mango.

Tue, September 19, 2006 - 12:46 PMI`m sorry I can`t help, I just wanted to say that I didn`t really know you could do anythng with green mangoes, not that you can buy them easily either. That being said, can you improvise and post your recipe if you don`t find the one you want?
I recently went through a green tomato phase, and my Thai friend refuses to eat bananas unless they are green, so there really is something to unripe fruits! -

Here is a great recipe that I have made many times -- it's quite spicy though so if you want something cooler cut the amount of chilies in half:

I wish I lived close enough. By the time produce gets here, it`s ripe, except of course for bananas. We can always find green bananas in any supermarket. Your recipe sounds deee-lish! I love it spicy!!
Just in a side note, the photo in your profile here, I was looking at it thinking to myself, that Ross character looks an awfull lot like Ali G. So, I opened you up to check it out, and lol, it is a photo of Ali G! Very good very good!
