I love that dessert but it seems the local Thai places don't make it. I love the silky astringent sweetness against the grainy creaminess on my tongue. So if you've got a recipe please share.

I read somewhere of someone substituting mango for ripe peach. Sounds like a good idea if you're stuck with not so top quality mangoes.
If you like that one, you may like Floating Lotus (bua loi). It's sweet/salty coconut milk as well:
