I like this dish very much ..even the iceburg lettuce is acceptable, in this case LOL ...but I can't find a decent recipe for it when I google.
Does anyone have a good recipe? I've been trying to "wing it" from home, but I'm missing something in the "sauce".

I have yet to put this recipe up on my site, altho we do make it at home fairly often.
guaytiaw kua gai (ก๋วยเตี๋ยวคั่วไก่)
guaytiaw = noodles, kua = to roast, gai = chicken
-----------------------------------
- large handful wide fresh rice noodles
- 1 egg
- vegetable oil (2 tablespoons?)
- about a teaspoon pickled radish (dtang chai, not chai bo)
- 2 tablespoons smashed garlic
- couple shakes of light soy (try healthy boy brand or the one with the boat on the label)
- some sliced chicken (couple small pieces)
- white pepper to taste
- some sugar (not much)
1) fry the garlic in hot oil until lightly browned
2) throw in the chicken and cook until not raw
3) throw in the noodles and mix well, keep them seperated
4) push to the side and crack an egg in, when set, mix all together.
5) throw in the pepper, radish, sugar and soy
6) serve over lettuce with sri racha chili sauce (thai kind, not viet/american kind)
as with all noodle stir fries, fry one portion at a time if making a lot.
in thailand they don't use iceberg - it's the wilty green one with the ruffled edges. forgot the name :)
there's not much "sauce" to it - it's fairly dry and "wok" tasting. -

Romaine worked just as well for me last time, but I think sprouts will also work well. The Iceberg was "interesting" ..I was put off at first... but not bad, really. I'd just prefer a healthier ingredient cuz I'm anal about "empty" foods.
Anyhow.. I'll try your version and see if it's any closer to what I had in the restaurant. I am pretty close ..just need to master making my own wide noodles. :o)
